Layered Winter Vegetable & Sausage Bake
A hearty one-dish wonder layered with seasonal vegetables, quality sausages, and a rich, savoury sauce. Warming, wholesome, and easy to prepare, it’s a comforting family favourite for colder days.

Cook Time 1 hour (40 mins covered, 20 mins uncovered)
Ingredients:

6 pork sausages (e.g. herby butcher’s sausages)

1 small butternut squash, peeled and sliced

2–3 parsnips, peeled and thinly sliced

2–3 potatoes, thinly sliced

1 leek, washed and sliced

2 tbsp olive oil or butter

1 tsp dried sage or rosemary

200ml double cream or crème fraîche

50g grated cheddar or Gruyère

Salt and pepper
Instructions:

Preheat oven to 190°C.

Cook sausages in a frying pan until browned all over (they don’t need to be cooked through). Slice into chunks.

Sauté the leek in butter or oil for 3–4 minutes until softened.

Layer the vegetables and sausage pieces in a greased baking dish: potatoes on the bottom, then parsnips, leeks, squash, and sausage. Season between layers with salt, pepper, and herbs.

Pour cream over the top and sprinkle with cheese.

Cover with foil and bake for 40 minutes, then uncover and bake another 20 minutes until golden and bubbling.

Serve with a simple green salad or steamed greens.
